If you’re living a healthy lifestyle, most mornings are pretty breezy, but we all know that’s not the case 100% of the time. Whether you were working late, binge studying, or out having way more fun than you planned, some mornings you just feel like a manatee. Today’s recipe is a fun way to make thooose mornings, or any ordinary morning, magical again! Transforming you from feeling like a giant tub of lard, to the beautiful, long-haired, glittering aquatic goddess you truly are, let’s hear it for Mermaid Toast!
Alright, so the base of this whimsical morning treat is the “cream cheese” spread. Besides that, all you will need is some fresh bread and 1-3 fun food colorants. For this recipe, I used Butterfly Pea Powder, Acai Berry Powder, and Spirulina (a mermaid’s favorite algae).
Vegan “Cream Cheese” Spread
To make the spread, you’ll need to soak 2 cups of almonds over night. Once they’ve soaked for at least 8 hours, rinse them in fresh hot water, pinch off the skins, and plop them into our blender or food processor like so . . .
- 1/3 cup of water
- 1 tsp lemon juice
- 1 tsp of apple cider vinegar
- 1 tsp almond milk
- 1 tsp of vegan butter
- 1 clove of garlic
- ½ tsp of sea salt
Then, blend together to create your “cream cheese” spread.
After you’ve made your spread, I recommend placing it in the fridge to cool while you toast a few slices of your favorite vegan bread. Now that your toast is ready, grab your home made “cream cheese” and get to spreadin’.
Make It Pretty
The taste of the spread is delightful, but that’s not enough. Remember . . . you’re a mermaid.
So sprinkle on your choice of colorant.
Swirl it in . . .
And add some sprinkles or edible glitter stars!
